How many chafing dishes you need for 100 guests
Use one chafing dish for each hot dish on each serving line: a 100-guest buffet with two mains and three hot sides needs 5 chafers on one line, or 10 if you split guests across two lines. Keep refill pans hot in insulated carriers, since a full-size pan holds roughly 30 to 50 main-course portions (typical).

One chafer per hot dish, per line
Every hot dish on a buffet sits in its own chafing dish. Add up the hot mains and hot sides, and that is the count for one serving line. A second line, or a double-sided table, doubles it.

Refill pans, not more chafers
A full-size pan holds roughly 30 to 50 portions of a main course (typical), and more of a side. For 100 guests, each main needs 2 to 4 full pans across the meal. One sits in the chafer; the rest wait hot in insulated food pan carriers (ours are Cater Gator insulated) and swap in as the first empties.

- Rectangular chafing dishes take a full-size pan, about 8 to 9 quarts (typical), and carry mains and larger sides.
- Round chafing dishes hold about 4 to 7 quarts (typical) and suit sauces, soups and smaller sides.

One line or two
Past about 100 guests (typical), a single line gets slow. Split guests across two lines, or set a double-sided buffet with the same dishes on each side. Build the line on 8-foot tables or banquet tables, with serpentine sections to turn a corner. Add food warmer lamps over a carving station.
Fuel and open flame
Chafing fuel burns with an open flame, and beach rules treat that seriously. On Okaloosa County beaches, fires are banned outside the grills the county provides. In South Walton, candles and any open flame need a permit from the South Walton Fire District.
